This first part covers the actions: หั่น (cut), สับ (mince), ปอก (peel), and the core frying verbs Thai keeps distinct — เจียว (shallow-fry), ผัด (stir-fry), ทอด (deep-fry), ต้ม (boil), นึ่ง (steam) and ย่าง (grill). It adds seasoning by the spoonful — น้ำปลา (fish sauce), น้ำตาล (sugar) — and names the tools, from the กระทะ (wok) to the ครก (mortar) for pounding chilli. The หอม family trips learners up: หอมแดง is shallot, หัวหอม is onion, and หอม alone means 'fragrant' — in a recipe หอม usually points to shallots.

เจียว is shallow-frying in oil — distinct from ทอด (deep-fry) and ผัด (stir-fry). Frying garlic or shallots until fragrant is the aromatic starting point of countless Thai dishes.

Rice has its own vocabulary by state: ข้าวสาร (raw grains) become ข้าวสวย / ข้าวสุก (cooked). Almost every Thai kitchen cooks it in a หม้อหุงข้าว, an electric rice cooker, measured by the cup.
คนให้เข้ากัน อย่าให้ติดกระทะ
khon hâi khâo gan yàa hâi dtìt grà-thá
Stir it together so it doesn't stick to the pan.

คน here is the verb 'to stir' — a homograph of the everyday noun คน 'person'. Only context tells them apart.

The ครก (mortar) and สาก (pestle) are core Thai kitchen tools. Pounding — ตำ — chillies and garlic into a paste is so central that ส้มตำ ('pounded sour', i.e. papaya salad) is named after the action.
